Fly Butter

Paper Title: Fraenkel, R, J Graff Zivin, and S Krumholz, “The Coal Transition and Its Implications for Health and Housing Values,” Land Economics, forthcoming.

Cocktail Pairing: Fly Butter

Rationale: The butterfly effect refers to the phenomenon whereby a small local effect has large ripple effects elsewhere. The key finding in this paper is that the health harms from coal are far reaching but the impacts on housing prices are very localized. Thus, we find something akin to the opposite of the butterfly effect. The Fly Butter cocktail is my own invention designed to start strong and finish smooth.

Recipe: Fly Butter

  • 1.5oz Cask-Strength Rye Whiskey

  • 1oz Cynar Amaro

  • 0.5oz Brown Butter Syrup (recipe below)

  • 3 dashes Black Walnut Bitters

  • 2 dash Angostura Bitters

  • Garnish: Orange peel (torched)

  1. Combine all ingredients with ice in a mixing glass and stir

  2. Strain into a lowball or whiskey glass with large ice cube.

  3. Flame orange peel and garnish

Additional Instructions: Brown Butter Syrup

  1. Gently melt unsalted butter in a pan, allowing it to brown slightly to develop a nutty aroma. Be careful not to burn it.

  2. Combine equal parts of browned butter and simple syrup (made from equal parts sugar and water), stirring until fully integrated.

  3. Let the mixture cool, then strain through a fine mesh to remove any solids.
